A nutritious and flavorful meal prep featuring high-protein steak and perfectly roasted potatoes, drizzled with a creamy chipotle sauce.

  • 1 lb steak (sirloin or flank)
  • 2 large potatoes (russet or sweet)
  • 1 cup Greek yogurt
  • 2 tbsp chipotle sauce
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Fresh cilantro for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Dice the potatoes into bite-sized pieces and toss them with olive oil, garlic powder, onion powder, salt, and pepper.
  3. Spread the seasoned potatoes on a baking sheet and roast for 25-30 minutes until golden and tender.
  4. While the potatoes are baking, season the steak with salt and pepper and sear it in a hot pan for 3-4 minutes on each side for medium-rare.
  5. In a mixing bowl, combine Greek yogurt with chipotle sauce until smooth.
  6. Allow the steak to rest for about 5 minutes, then slice thinly against the grain.
  7. In meal prep containers, place a portion of roasted potatoes alongside the sliced steak and drizzle with the creamy chipotle sauce.
  8. Garnish with fresh cilantro before serving.

Notes

Store meal prep containers in the fridge for up to 4 days, or freeze portions for up to three months.
