A simple and healthy snack, these High Protein Quinoa Bars provide lasting energy without the sugar crash.

Ingredients

  • 1 cup puffed quinoa
  • 1/2 cup natural nut butter (e.g., almond or peanut)
  • 1/2 cup dark chocolate chips
  • 1/4 cup honey or maple syrup
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. In a large bowl, combine the puffed quinoa, nut butter, honey or maple syrup, vanilla extract, and a pinch of salt. Stir until well combined.
  2. Gently fold in the dark chocolate chips.
  3. Line an 8×8 inch baking dish with parchment paper and pour the mixture into the dish, pressing down firmly to pack it evenly.
  4. Refrigerate for at least 30 minutes until set.
  5. Once set, cut into bars and enjoy as a snack or healthy treat.

Notes

Store leftovers in an airtight container in the refrigerator for up to one week or freeze for up to three months.
