2 cups cooked chicken, shredded
1 cup spinach, chopped
1 cup artichoke hearts, chopped
1 cup Greek yogurt
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
2 cloves garlic, minced
1 tsp onion powder
1 tsp salt
1/2 tsp black pepper
1/2 tsp paprika
1 cup cooked quinoa or brown rice (optional)
Instructions
Preheat your oven to 350°F (175°C).
Combine the shredded chicken, chopped spinach, artichoke hearts, Greek yogurt, mozzarella cheese, Parmesan cheese, minced garlic, onion powder, salt, black pepper, and paprika in a large mixing bowl. Mix until well combined.
Fold in the cooked quinoa or brown rice, if using.
Transfer the mixture into a greased casserole dish and spread it evenly.
Bake in the preheated oven for 25-30 minutes or until bubbly and golden on top.
Allow to cool slightly before serving.
