A comforting dish featuring tender chicken in a rich creamy sauce served over rice, perfect for family dinners and gatherings.

Ingredients

Scale
  • 2 boneless, skinless chicken breasts
  • 1 cup rice
  • 1 can cream of chicken soup
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Olive oil
  • Fresh parsley for garnish

Instructions

  1. Sauté the Aromatics: In a large skillet, heat a drizzle of olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until they soften and become fragrant, about 3-5 minutes.
  2. Brown the Chicken: Season the chicken breasts with salt and pepper to taste. Carefully add them to the skillet, cooking until golden brown on both sides, roughly 6-8 minutes each.
  3. Create the Creamy Sauce: Stir in the cream of chicken soup, chicken broth, and heavy cream, then bring to a gentle simmer.
  4. Combine with Rice: Add the rice to the skillet, ensuring it’s well coated in the creamy sauce. Cover and cook for about 20 minutes until the rice is tender and the chicken is cooked through.
  5. Garnish and Serve: Garnish with freshly chopped parsley before serving.

Notes

Pairs well with steamed vegetables or a salad. Leftovers can be stored for up to 3 days.
