A delightful homemade ice cream cake with layers of vanilla and chocolate ice cream on a crunchy chocolate crust, perfect for summer birthdays and family celebrations.

Ingredients

  • 2 cups crushed chocolate wafer cookies
  • 1/2 cup melted butter
  • 1 quart vanilla ice cream, softened
  • 1 quart chocolate ice cream, softened
  • 1 cup whipped cream
  • Chocolate syrup (for drizzling)
  • Sprinkles (for decoration)

Instructions

  1. Preheat your oven to 350°F (175°C) to get ready for the crust that will form the base of our cake.
  2. Mix the crushed chocolate wafer cookies with melted butter in a bowl until it holds together when pressed.
  3. Press the mixture firmly into the bottom of a springform pan, creating an even layer.
  4. Bake the crust in the preheated oven for 10 minutes, then set aside to cool completely.
  5. Spread the softened vanilla ice cream evenly over the cooled crust.
  6. Freeze the cake for about 30 minutes to help the vanilla layer set.
  7. Spread the chocolate ice cream evenly over the vanilla layer.
  8. Freeze the cake again for another 30 minutes to set the chocolate layer.
  9. Top with whipped cream and drizzle with chocolate syrup.
  10. Freeze the entire cake for at least 4 hours or until completely firm.
  11. Serve after allowing the cake to sit at room temperature for a few minutes for easy slicing.

Notes

Store leftovers in an airtight container in the freezer for up to two weeks.
