  • 1/2 teaspoon cinnamon
  • 1/2 cup unsalted butter, melted
  • 1 cup milk
  • 2 large eggs
  • 2 cups fresh peaches, diced
  • 1/2 cup brown sugar
  • 1/4 cup all-purpose flour (for the topping)
  • 1/4 cup unsalted butter (for the topping)
  • 1/4 cup rolled oats
  • 1/2 teaspoon cinnamon (for the topping)

Instructions

  1. Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, sugar, baking powder, salt, and cinnamon.
  3. In another bowl, whisk together melted butter, milk, and eggs.
  4. Gradually add the wet ingredients to the dry ingredients, mixing gently until just combined, then fold in peaches.
  5. In a separate bowl, mix brown sugar, flour, oats, melted butter, and cinnamon until crumbly.
  6. Spoon the muffin batter into the prepared tin, filling each cup about two-thirds full.
  7. Sprinkle the crumb topping over each muffin.
  8. Bake in the preheated oven for 20-25 minutes or until a toothpick comes out clean.
  9. Allow the muffins to cool slightly before serving.
