  • 1 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 1 1/2 cups peaches, peeled and diced
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Mix together the flour, sugar, baking powder, and salt in a large bowl.
  3. Whisk together the melted butter, milk, and vanilla extract in another bowl.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Fold in the diced peaches, cinnamon, and nutmeg.
  6. Divide the batter evenly among the muffin cups, filling each about two-thirds full.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
  8. Allow to cool for a few minutes in the tin, then transfer to a wire rack.
