2 cups mashed potatoes
1/2 cup milk, warmed
1/4 cup butter, melted
1 tablespoon sugar
1 teaspoon salt
2 teaspoons active dry yeast
4 cups all-purpose flour
1 egg (optional, for egg wash)
Instructions
Combine Wet Ingredients: In a large mixing bowl, combine the warmed mashed potatoes, warmed milk, melted butter, sugar, and salt. Make sure everything is well mixed and at a comfortable temperature.
Sprinkle the active dry yeast over the mixture and let it bloom for about 5 minutes. You’ll know it’s ready when it becomes frothy and bubbly.
Gradually mix in the flour, one cup at a time, until a soft dough begins to form. Don’t rush this step; allowing the flour to blend evenly is key to soft rolls.
Turn the dough out onto a floured surface and knead it for 5-7 minutes. You want it to become smooth and elastic.
Place the kneaded dough into a greased bowl, cover it with a kitchen towel, and let it rise in a warm spot for about an hour, or until it has doubled in size.
Once risen, punch down the dough to release the air. Carefully shape the dough into golf ball-sized rolls.
Place the rolls on a parchment-lined baking sheet, ensuring they have enough space to rise. Cover them again and let them rise for another 30 minutes.
While the rolls are rising, preheat your oven to 375°F (190°C).
If desired, beat an egg in a small bowl and brush it over the tops of the rolls before baking.
Place the baking sheet in the oven and bake for 20-25 minutes, or until they turn a beautiful golden brown.
Notes
Store leftover rolls in an airtight container at room temperature for up to 3 days. Freeze for up to 3 months.
