Delight in these nostalgic homemade Twinkies, filled with a creamy vanilla filling and soft sponge cake.

  • 1 cup all-purpose flour
  • 1.5 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 2 cups powdered sugar
  • 1 cup heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C). In a mixing bowl, whisk together the all-purpose flour, baking powder, and salt.
  2. Cream together the softened unsalted butter and granulated sugar until light and fluffy.
  3. Add the eggs, one at a time, then stir in the vanilla extract and milk.
  4. Gradually add the dry flour mixture to the wet ingredients, mixing on low speed until fully combined.
  5. Pour the batter into a Twinkie mold, filling each cavity about 2/3 full. Bake for 12-15 minutes.
  6. Remove the cakes from the oven and let them cool in the pan for 10 minutes before transferring to a wire rack.
  7. Beat the heavy cream until soft peaks form, then add the powdered sugar and continue beating until stiff peaks form.
  8. Fill the centers of each Twinkie with the whipped cream filling using a piping bag or squeeze bottle.

Notes

For a perfectly smooth batter, ensure all your ingredients are at room temperature before mixing. Grease your mold well to prevent sticking.
