Healthy and delicious muffins packed with fiber, perfect for breakfast or a snack.

Ingredients

  • 1 cup whole wheat flour
  • 1 cup bran cereal
  • 1/2 cup honey
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup raisins or nuts (optional)

Instructions

  1. Preheat the oven to 375°F (190°C) and prepare a muffin tin by greasing it or lining with muffin cups.
  2. In a large bowl, combine the bran cereal, flour, baking powder, baking soda, and salt.
  3. In another bowl, whisk together the honey, milk, vegetable oil, and egg until well combined.
  4. Add the wet ingredients to the dry ingredients and mix until just combined. If using, fold in raisins or nuts.
  5. Fill each muffin cup about 2/3 full with the batter.
  6. Bake for 15-20 minutes or until a toothpick inserted in the center comes out clean.
  7. Let cool for a few minutes in the tin before transferring to a wire rack.

Notes

Serve warm or at room temperature. Store in an airtight container.
