  • 2 cups cooked rice
  • 1 lb chicken breast, diced
  • 1/4 cup honey
  • 2 tbsp chipotle sauce
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, cooked
  • 1 avocado, sliced
  • Fresh cilantro, for garnish

Instructions

  1. Whisk together honey, chipotle sauce, olive oil, garlic powder, onion powder, salt, and pepper in a bowl to create the marinade.
  2. Marinate the diced chicken in the honey chipotle mixture for at least 30 minutes, or longer for deeper flavor.
  3. Cook the marinated chicken in a skillet over medium heat until fully cooked and caramelized.
  4. Assemble the bowls by placing a serving of rice at the bottom, then layering with cooked chicken, black beans, corn, and avocado.
  5. Garnish with fresh cilantro and serve immediately.

Notes

For quicker prep, use pre-cooked rice. Adjust the spice level by varying the chipotle sauce.
