A delightful combination of sweet and savory flavors with honey-lime marinated chicken, creamy avocado, and crunchy red bell pepper layered over rice.

Ingredients

  • 2 cups cooked rice
  • 2 chicken breasts
  • 2 tablespoons honey
  • Juice of 1 lime
  • 1 ripe avocado
  • 1 red bell pepper, diced
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a bowl, mix the honey, lime juice, salt, and pepper. Marinate the chicken breasts in this mixture for at least 30 minutes.
  2. Grill or pan-fry the marinated chicken until fully cooked, about 6-7 minutes per side. Set aside and slice into thin pieces.
  3. In a serving dish, layer your cooked rice, followed by the sliced chicken. Add fresh avocado slices and diced red bell pepper on top.
  4. Drizzle remaining honey-lime marinade over the dish and garnish with fresh cilantro. Serve warm.

Notes

For a twist, substitute the chicken for shrimp or tofu. You can also add spices like cumin or corn for variations.
