A vibrant dish that combines the sweetness of honey with zesty lime, featuring succulent chicken and creamy avocado over flavorful rice.

  • 1 lb boneless skinless chicken breasts (cut into 1-inch pieces)
  • 2 tbsp olive oil
  • 1 cup uncooked long-grain white rice (jasmine or basmati recommended)
  • 1.75 cups chicken broth (low-sodium preferred)
  • 2 tbsp honey
  • 3 tbsp fresh lime juice (about 2 limes)
  • 1 tsp lime zest
  • 2 cloves garlic (minced)
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 avocados (ripe but firm, diced)
  • 0.25 cup fresh cilantro (chopped)
  • Lime wedges (for serving)

Instructions

  1. Heat the olive oil in a large skillet with a tight-fitting lid over medium-high heat. Add the chicken pieces and cook for 5-7 minutes until golden brown and cooked through. Remove and set aside.
  2. In the same skillet, add the uncooked rice and toast for 2 minutes until slightly golden.
  3. Add the chicken broth, honey, lime juice, lime zest, garlic, salt, and pepper; bring to a boil.
  4. Reduce heat, cover, and simmer for 15-20 minutes until the rice absorbs the liquid.
  5. Return the cooked chicken to the skillet and stir to combine.
  6. Fold in diced avocado and cilantro gently to avoid mashing the avocado.
  7. Let rest for 5 minutes before serving.

Notes

For extra flavor, don’t skip the toasting step for the rice. Great for meal prep and stores well in the fridge.
