  • 1 lb boneless skinless chicken breasts
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
  • 1 teaspoon salt
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 2 cups corn flakes, finely crushed
  • 2 tablespoons olive oil
  • 8 ounces feta cheese, crumbled
  • 1/4 cup honey
  • 1 to 2 tablespoons sriracha or hot sauce
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon crushed red pepper flakes

Instructions

  1. Preheat your oven to 425°F. Line a large baking sheet with parchment paper or set a wire rack over it for optimal crispiness.
  2. Whisk together the honey, sriracha, apple cider vinegar, and red pepper flakes in a small bowl. Set this sweet and spicy concoction aside for later.
  3. Mix together the garlic powder, onion powder, smoked paprika, oregano, black pepper, cayenne pepper, and salt in another small bowl. Rub this aromatic seasoning generously over both sides of each chicken cutlet.
  4. Place the flour mixed with half of the seasoning in one shallow bowl, beaten eggs in a second, and crushed corn flakes mixed with the remaining seasoning in a third.
  5. Take each seasoned chicken cutlet, dredge it in the flour (shaking off any excess), dip into the beaten egg, and then press firmly into the cornflake crumbs.
  6. Place the coated chicken on the prepared baking sheet in a single layer. Bake for 15 minutes, or until the coating begins to crisp up.
  7. Remove the chicken from the oven and generously top each piece with crumbled feta cheese. Return them to the oven for another 10 minutes.
  8. Drizzle each piece of chicken generously with the hot honey sauce. Garnish with freshly chopped parsley or thyme, and serve immediately.
