A delightful blend of sweet and savory flavors in roasted sweet potatoes filled with a spicy honey ground beef mixture.

Ingredients

  • 4 medium sweet potatoes
  • 1 tablespoon olive oil
  • 1 medium onion, finely diced
  • 2 cloves garlic, minced
  • 1 pound ground beef
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • 1/2 teaspoon chili flakes (adjust to taste)
  • Salt and black pepper to taste
  • 2 tablespoons hot honey
  • Feta or goat cheese for topping (optional)
  • Fresh herbs for garnish (optional)
  • Sliced green onions for garnish (optional)
  • Lime juice for serving (optional)
  • Avocado slices for serving (optional)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. Slice the sweet potatoes lengthwise, score the flesh lightly, brush with olive oil, and season with salt and pepper.
  2. Place the sweet potatoes cut-side down on the baking sheet and roast for 30-40 minutes until fork-tender.
  3. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the finely diced onion and sauté for about 3-4 minutes until translucent.
  4. Add minced garlic and cook for 30 seconds, stirring constantly.
  5. Add the ground beef to the skillet and cook for 6-8 minutes until browned. Drain excess grease if necessary.
  6. Sprinkle in the smoked paprika, cumin, chili flakes, salt, and black pepper. Stir and cook for another minute.
  7. Drizzle in 2 tablespoons of hot honey and let it simmer for 2-3 minutes.
  8. Remove the roasted sweet potatoes from the oven and scoop out some flesh to create boats.
  9. Fill the sweet potato boats with the seasoned beef mixture.
  10. Pop the filled boats back into the oven for 5-7 minutes to warm through.
  11. Once out of the oven, drizzle with remaining hot honey and top with cheese, herbs, and lime juice if desired.
  12. Let them rest for about 5 minutes before serving.

Notes

Reheat leftovers in the oven or microwave. Adjust cooking times for larger sweet potatoes.
