A hearty and satisfying Mexican breakfast featuring eggs, tortillas, salsa, and beans.

  • 4 large eggs
  • 4 corn tortillas
  • 1 cup refried beans
  • 1 cup salsa (red or green)
  • 1/2 cup crumbled queso fresco
  • 1 avocado, sliced
  • Fresh cilantro, for garnish
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. Fry the tortillas: Heat oil in a skillet over medium heat and lightly fry each corn tortilla until golden and crisp. Remove and set aside.
  2. Cook the eggs: In the same skillet, crack the eggs and cook to your desired level of doneness, seasoning with salt and pepper.
  3. Warm the beans and salsa: Warm the refried beans and salsa in separate pots, stirring occasionally until heated through.
  4. Assemble the dish: To assemble, spread refried beans on each tortilla, place a fried egg on top, and spoon salsa over the egg.
  5. Garnish and serve: Garnish with crumbled queso fresco, avocado slices, and fresh cilantro. Serve immediately.

Notes

For a crispy tortilla without frying, lightly toast them in the oven or on a skillet without oil. Customize with your favorite toppings.
