A vibrant, roasted cabbage dish infused with Indian spices, perfect as a side or main.

Ingredients

  • 1 medium cabbage
  • 2 tablespoons olive oil
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon red chili powder
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the cabbage into wedges.
  3. Drizzle the olive oil over the cabbage wedges.
  4. Sprinkle cumin seeds, turmeric, coriander, red chili powder, and salt over the cabbage.
  5. Toss to coat the wedges evenly with oil and spices.
  6. Roast in the oven for about 25-30 minutes.
  7. Garnish with fresh cilantro before serving.

Notes

Leftover roasted cabbage can be kept in an airtight container in the fridge for up to three days.
