A flavorful Indonesian Chicken recipe marinated in coconut milk and spices, baked to perfection for a tender and aromatic dish.

  • 1 cup coconut milk
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 3 tablespoons soy sauce
  • 2 tablespoons brown sugar
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • Juice of 1 lime
  • Salt and pepper to taste

Instructions

  1. Create the Flavorful Marinade: In a bowl, combine coconut milk, minced garlic, grated ginger, soy sauce, brown sugar, and your chosen spices (turmeric, coriander, and cumin). Mix until well-blended and fragrant.
  2. Marinate the Chicken: Add the chicken pieces to the marinade, ensuring they are well-coated. Cover the bowl and let it sit in the refrigerator for at least 1 hour, or ideally overnight, to allow the flavors to infuse deeply into the chicken.
  3. Preheat the Oven: Preheat your oven to 375°F (190°C). This temperature is perfect for baking and will help achieve a beautifully cooked chicken with a lovely glaze.
  4. Assemble for Baking: Take the marinated chicken from the refrigerator and place it in a baking dish. Pour the remaining marinade over the chicken, allowing it to soak up all that amazing flavor.
  5. Bake to Perfection: Bake the chicken in the preheated oven for 35-45 minutes, or until the chicken is cooked through and tender. It should reach an internal temperature of 165°F (74°C). Your kitchen will smell heavenly by now!
