Delicious apple brownies combining sweetness and a soft, cake-like texture, perfect for autumn.

Ingredients

  • 2 cups grated apples
  • 1 cup sugar
  • 1/2 cup butter, melted
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a large bowl, mix together the grated apples, sugar, melted butter, and vanilla extract.
  3. Add the eggs one at a time, beating well after each addition.
  4. In another bowl, combine the flour, baking powder, cinnamon, and salt. Gradually add this to the apple mixture, stirring until just combined.
  5. If using walnuts or pecans, fold them in now.
  6. Spread the batter evenly in the prepared pan.
  7. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  8. Allow to cool before cutting into squares and serving.

Notes

Serve warm with vanilla ice cream or whipped cream. Store leftovers in an airtight container for up to four days, or freeze for up to three months.
