Delicious and comforting banana nut muffins that are simple to make and perfect for breakfast or snacks.

Ingredients

  • 2 ripe bananas, mashed
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • Pinch of salt
  • 3/4 cup sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup chopped nuts (e.g., walnuts or pecans)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a muffin tin.
  2. Mash the bananas with a fork until smooth, then stir in the melted butter.
  3. Combine the baking soda and a pinch of salt with the banana mixture.
  4. Add the sugar, beaten egg, and vanilla extract to the banana mixture and mix well.
  5. Gently stir in the flour and chopped nuts until just combined.
  6. Pour the batter into the muffin tin, filling each cup about 2/3 full.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
  8. Let the muffins cool for a few minutes before transferring them to a wire rack.

Notes

Serve with cream cheese or honey. Store in an airtight container at room temperature or freeze for longer storage.
