These tarts combine the rich sweetness of slow-cooked onions with creamy goat cheese, all wrapped in flaky puff pastry for a delightful appetizer.

Ingredients

  • 1 sheet puff pastry
  • 2 large onions, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon balsamic vinegar
  • 4 oz goat cheese, crumbled
  • Salt and pepper to taste
  • Fresh thyme for garnish

Instructions

  1. Preheat your oven to 400°F (200°C). Roll out the puff pastry on a floured surface and cut it into squares.
  2. Heat the olive oil in a pan over medium heat, add the sliced onions, and cook until caramelized, about 15-20 minutes. Stir in balsamic vinegar, seasoning with salt and pepper.
  3. Place the caramelized onions on top of the puff pastry squares and crumble goat cheese over them.
  4. Bake the tarts for 15-20 minutes until golden brown and puffed up.
  5. Sprinkle fresh thyme over the baked tarts and serve warm.

Notes

Choose sweeter onions like Vidalia for best results. Allow puff pastry to thaw in the refrigerator overnight for better puffing.
