Delightful pancakes inspired by classic Spanish churros, coated in cinnamon sugar and perfect for breakfast or brunch.

Ingredients

  • 1 cup all-purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon cinnamon
  • 2 tablespoons butter, melted
  • 1/4 cup sugar (for coating)
  • 1 teaspoon cinnamon (for coating)

Instructions

  1. Whisk the dry ingredients in a large bowl until well combined.
  2. Mix the wet ingredients in another bowl until combined.
  3. Pour the wet mixture into the dry ingredients and mix until smooth.
  4. Heat a non-stick skillet over medium heat.
  5. Pour 1/4 cup of batter for each pancake onto the skillet and cook until bubbles form, then flip and cook until golden brown.
  6. Combine sugar and cinnamon in a small bowl for coating.
  7. Toss the cooked pancakes in the cinnamon-sugar mixture while still warm.
  8. Serve warm with chocolate sauce or maple syrup on top.

Notes

For the fluffiest pancakes, do not overmix. Customize by adding chocolate chips or orange zest.
