  • 1/2 cup sugar
  • 1/2 cup almond flour
  • 1/2 cup all-purpose flour
  • 1/4 cup butter, softened
  • 1 egg
  • 1 teaspoon almond extract

  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • Sliced almonds, for topping
  • Powdered sugar, for dusting

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare baking sheets with parchment paper.
  2. Cream together the ricotta cheese and softened butter until smooth.
  3. Add the sugar, egg, almond extract, and vanilla extract; mix well until incorporated.
  4. Combine the almond flour, all-purpose flour, baking powder, and salt in a separate bowl.
  5. Mix the dry ingredients into the wet ingredients until combined, being careful not to over-mix.
  6. Drop spoonfuls of dough onto the baking sheet, spacing them about 2 inches apart.
  7. Top each cookie with sliced almonds.
  8. Bake for 15-18 minutes or until the edges are lightly golden.
  9. Cool slightly on the baking sheet, then dust with powdered sugar before serving.
