  • 4 chicken thighs
  • 1 can of diced tomatoes
  • 4 cloves of garlic, minced
  • 1 onion, chopped
  • 2 tablespoons of olive oil
  • 1 teaspoon of Italian herbs (basil, oregano, thyme)
  • Salt and pepper to taste
  • Pasta or crusty bread for serving

Instructions

  1. Sear the chicken thighs in a skillet with olive oil over medium heat for 3-4 minutes on each side until browned.
  2. Transfer the chicken thighs to the slow cooker.
  3. Add diced tomatoes, minced garlic, chopped onion, and Italian herbs on top of the chicken.
