Delightful, soft cookies filled with sweet peach preserves, resembling ripe peaches.

Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup peach preserves
  • Yellow and red food coloring
  • Powdered sugar for dusting

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the eggs, vanilla extract, baking powder, and salt, then mix until smooth.
  4. Gradually add the flour, stirring until a soft dough forms.
  5. Take small portions of the dough, flatten slightly, and add a spoonful of peach preserves.
  6. Fold the dough over the preserves and shape them into balls.
  7. Place the cookie balls on a lined baking sheet and bake for 15-20 minutes.
  8. Once cooled, use food coloring to tint the cookies to resemble peaches.
  9. Dust with powdered sugar before serving.

Notes

Store leftover cookies in an airtight container for up to five days.
