A flavorful dish that combines juicy chicken thighs with the spices of jerk seasoning, sweet pineapple, and vibrant vegetables.

  • 1.5 lbs chicken thighs
  • 2 tbsp jerk seasoning
  • 1 cup fresh pineapple, diced
  • 1 red bell pepper, sliced
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Cooked rice and beans for serving

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, toss the chicken thighs with jerk seasoning, olive oil, garlic, salt, and pepper.
  3. Arrange the seasoned chicken thighs in a baking dish.
  4. Scatter the diced pineapple, sliced bell pepper, and onion around the chicken.
  5. Bake for 35-40 minutes, or until the chicken is cooked through.
  6. Serve hot alongside rice and beans.

Notes

For extra flavor, marinate the chicken in the fridge for an hour before cooking. Store leftovers in an airtight container for up to 3 days.
