Keto Cajun Shrimp & Sausage Stuffed Cabbage

A delicious and flavorful dish combining shrimp, sausage, and spices, all wrapped in tender cabbage leaves. Perfect for a keto-friendly meal.

Ingredients

  • 1 large head green cabbage
  • 1 pound shrimp, peeled and deveined
  • 1 pound smoked sausage, sliced
  • 1 medium onion, chopped
  • 1 bell pepper, chopped
  • 3 cloves garlic, minced
  • 1 can diced tomatoes (14.5 oz)
  • 2 tablespoons Cajun seasoning
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Bring a large pot of water to a boil. Remove the cabbage core and place the head of cabbage in the boiling water for about 5 minutes, until softened.
  3. Remove the cabbage from the pot and gently peel off the leaves. Set aside.
  4. In a skillet, heat olive oil over medium heat. Add the onion, bell pepper, and garlic; sauté until softened.
  5. Add the sliced sausage to the skillet and cook until browned.
  6. Add the shrimp to the skillet, cooking until they turn pink and tender.
  7. Stir in the diced tomatoes and Cajun seasoning. Cook for an additional 3-4 minutes.
  8. Spoon some of the shrimp and sausage mixture into the center of a cabbage leaf, roll the leaf tightly, and place seam-side down in a baking dish.
  9. Repeat until all filling is used.
  10. If desired, pour any remaining sauce over the stuffed cabbage. Cover with foil and bake for 25-30 minutes.
  11. Serve hot and enjoy.

Notes

Leftovers can be stored in an airtight container for up to three days. This dish can also be frozen for up to a month.
