Delightfully crispy pepperoni bites filled with gooey melted cheese, perfect for a low-carb snack or appetizer.

Ingredients

  • 12 slices pepperoni
  • 2 tablespoons cream cheese, softened
  • 1/2 cup shredded mozzarella cheese
  • 1/4 teaspoon Italian seasoning
  • 1/8 teaspoon garlic powder
  • 1 tablespoon chopped fresh parsley

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Place pepperoni slices on the prepared sheet, spacing them about 1/2 inch apart.
  3. Spoon approximately 1 teaspoon of softened cream cheese onto the center of each pepperoni slice.
  4. Sprinkle shredded mozzarella cheese over the cream cheese on each pepperoni cup.
  5. Season each bite with Italian seasoning and a dash of garlic powder.
  6. Bake in the preheated oven for 5 to 7 minutes, or until cheese is fully melted and edges of pepperoni are crisp.
  7. Remove from the oven and let cool slightly before garnishing with fresh parsley.

Notes

Serve with marinara sauce for dipping. Reheat leftovers in the oven for best results.
