A tangy and creamy Key Lime Cheesecake with a buttery graham cracker crust, perfect for any occasion.

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 4 large eggs
  • 1 cup sour cream
  • 1/2 cup fresh key lime juice
  • 1 tablespoon key lime zest
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. Mix the graham cracker crumbs with the melted butter and 1/4 cup of sugar until combined. Press this mixture firmly into the bottom of a springform pan to form a solid crust.
  3. Beat together the eggs, remaining sugar, sour cream, key lime juice, key lime zest, and vanilla extract until everything is well combined and smooth.
  4. Pour the luscious filling into the prepared crust, making sure it’s evenly distributed.
  5. Bake for about 45 minutes or until the center is set but slightly jiggles.
  6. Cool at room temperature, then refrigerate for at least 4 hours (or overnight if possible).

Notes

Serve with a dollop of whipped cream and fresh berries. Use fresh key lime juice for the best flavor.
