A delightful bowl of warm rice layered with savory grilled chicken marinated in Korean BBQ flavors, topped with spicy kimchi.

  • 2 boneless, skinless chicken breasts
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 2 tablespoons sesame oil
  • 1 tablespoon garlic, minced
  • 1 tablespoon ginger, minced
  • 2 cups cooked rice
  • 1 cup kimchi
  • 1 green onion, sliced
  • Sesame seeds for garnish

Instructions

  1. Prepare the marinade by mixing soy sauce, brown sugar, sesame oil, garlic, and ginger in a bowl.
  2. Marinate the chicken by placing it in the marinade, ensuring it is well-coated. Let it marinate for at least 30 minutes.
  3. Grill the chicken over medium-high heat until fully cooked and slightly charred, about 6-7 minutes per side.
  4. Heat the cooked rice and mix in the kimchi until warmed through.
  5. Assemble the bowls by slicing the BBQ chicken and placing it over the kimchi rice.
  6. Garnish with sliced green onion and sprinkle sesame seeds before serving.

Notes

For extra flavor, consider adding red pepper flakes to the marinade. Leftovers can be stored in an airtight container for up to 3 days.
