A cozy lamb stew filled with tender vegetables and rich flavors, perfect for chilly days and family dinners.

Ingredients

  • 1.5 lbs lamb, cut into 1-inch pieces
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 potatoes, cubed
  • 1 cup peas

Instructions

  1. Heat the olive oil in a large pot over medium heat until shimmering.
  2. Brown the lamb pieces for about 5-7 minutes until browned on all sides.
  3. Set the browned lamb aside on a plate.
  4. Sauté the chopped onion, sliced carrots, and minced garlic until the onion turns translucent, about 5 minutes.
  5. Combine the beef broth, tomato paste, dried thyme, and bay leaf. Then, add the browned lamb back into the pot.
  6. Simmer the mixture gently for about 1.5 hours.
  7. Add the cubed potatoes and cook for an additional 30 minutes until they are soft.
  8. Stir in the cup of peas and cook for another 5 minutes.
  9. Season with salt and pepper to taste before serving.

Notes

Pairs well with crusty bread or creamy mashed potatoes. Freezes beautifully for quick meals.
