Delicious lemon bars with a perfect balance of sweet and tangy flavors, topped with powdered sugar.

Ingredients

  • 1 cup all-purpose flour
  • 1/4 cup powdered sugar
  • 1/2 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 cup fresh lemon juice
  • 1/4 cup all-purpose flour (for the filling)
  • 1 teaspoon baking powder
  • Powdered sugar for dusting

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×9 inch baking dish.
  2. Mix together 1 cup of flour and 1/4 cup of powdered sugar. Cut in the softened butter until resembling coarse crumbs.
  3. Press this mixture firmly into the bottom of the baking dish. Bake for 15 minutes.
  4. Whisk together the granulated sugar, eggs, lemon juice, the 1/4 cup of flour, and the baking powder in a separate bowl.
  5. Pour the lemon mixture over the baked crust and spread evenly.
  6. Bake for an additional 20-25 minutes, until the filling is set.
  7. Cool completely and dust with powdered sugar before cutting into squares.

Notes

For best flavor, use fresh lemon juice. Let the bars cool completely before cutting.
