  • 1 cup all-purpose flour
  • 1/4 cup powdered sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 cup granulated sugar
  • 2 tablespoons lemon juice
  • 1 tablespoon lemon zest
  • 1/4 teaspoon salt
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the all-purpose flour and powdered sugar in a mixing bowl. Cut in the softened butter until the mixture resembles coarse crumbs.
  3. Press it firmly into the bottom of a greased 8×8-inch baking dish and bake for 15 minutes or until lightly golden.
  4. Whisk together the eggs, granulated sugar, lemon juice, lemon zest, and salt to create the filling.
  5. Pour the mixture over the baked crust and bake for an additional 20 minutes, until the edges are set.
  6. Cool completely in the pan, dust with powdered sugar, and cut into squares.

Notes

Store leftovers in an airtight container in the refrigerator for up to a week. They can also be frozen for up to two months.
