Delightful Lemon Blueberry Bars combining tart lemon with fresh blueberries, perfect for any occasion.

  • 1 1/2 cups all-purpose flour
  • 1/2 cup powdered sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/2 cup fresh lemon juice
  • Zest of 1 lemon
  • 1 cup fresh blueberries
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven and prepare your baking dish by greasing a 9×9 inch dish or lining it with parchment paper.
  2. Create the buttery crust by combining flour and powdered sugar, and cutting in softened butter until crumbly. Press this mixture into the baking dish.
  3. Bake the crust in the preheated oven for about 15 minutes.
  4. Mix the lemon filling by whisking together granulated sugar, eggs, lemon juice, lemon zest, baking powder, and salt until smooth.
  5. Fold in the fresh blueberries gently to keep them intact.
  6. Pour the lemon filling over the baked crust and spread evenly.
  7. Bake until set, around 20-25 minutes.
  8. Cool completely before cutting into squares and serve with powdered sugar.

Notes

For added flavor, try using more lemon zest. Substitute blueberries for raspberries or strawberries for a twist.
