A delightful loaf combining zesty lemon and juicy blueberries for a refreshing and moist bread.

Ingredients

  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon zest
  • ¼ cup freshly squeezed lemon juice
  • ½ cup buttermilk
  • 1 cup fresh blueberries

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. Whisk together flour, baking powder, baking soda, and salt in a bowl.
  3. Cream together the softened butter and sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in vanilla extract, lemon zest, and lemon juice.
  5. Combine the flour mixture alternately with the buttermilk, starting and ending with the flour mixture.
  6. Fold in the blueberries gently.
  7. Pour the batter into the prepared loaf pan and bake for 55-60 minutes.
  8. Let the bread cool in the pan for 10 minutes before transferring it to a wire rack.

Notes

Serve warm with butter or cream cheese. Wrap tightly for storage.
