A delightful cake that combines the tartness of lemon with the sweetness of blueberries, perfect for any occasion.

  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup milk
  • 3 large eggs
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • Zest of 1 lemon
  • 1 cup blueberries (fresh or frozen)
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan.
  2. Cream together the softened butter and sugar until light and fluffy.
  3. Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract and lemon zest.
  4. Whisk together the flour, baking powder, and salt in another bowl.
  5. Gradually add the flour mixture to the butter mixture, alternating with the milk.
  6. Gently fold in the blueberries.
  7. Pour the batter into the prepared baking pan and spread it evenly.
  8. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the cake to cool in the pan, then dust with powdered sugar before serving.

For added flavor, consider adding almond extract or substituting blueberries with raspberries.
