A delightful poke cake featuring tender lemon flavor soaked in sweetened condensed milk and topped with blueberry pie filling.

  • 1 box lemon cake mix
  • 1 cup water
  • 1/3 cup vegetable oil
  • 3 large eggs
  • 1 can sweetened condensed milk
  • 1/4 cup lemon juice
  • 1 cup blueberry pie filling
  • 1 container whipped topping

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9×13 inch cake pan.
  2. Mix together the lemon cake mix, water, vegetable oil, and eggs until well combined. Pour the batter into the prepared cake pan.
  3. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  4. Cool the cake for about 10 minutes.
  5. Create a mixture of sweetened condensed milk and lemon juice until well combined.
  6. Poke holes all over the top of the cake and pour the lemon mixture evenly over the cake.
  7. Add the blueberry pie filling over the top of the cake.
  8. Cool completely in the pan.
  9. Top the cake with a generous layer of whipped topping before serving.
  10. Chill the cake in the refrigerator for at least 1 hour before serving.

Notes

This cake stays moist and flavorful for up to 3 days in the refrigerator. Consider re-whipping some topping if serving leftovers.
