Delightfully tangy lemon cheesecake bars with a buttery graham cracker crust, perfect for any gathering.

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 16 ounces cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1/4 cup sour cream
  • 1/4 cup lemon juice
  • 1 tablespoon lemon zest
  • 1 cup lemon curd

Instructions

  1. Preheat the oven to 325°F (163°C). Grease a 9×13 inch baking dish.
  2. Combine the graham cracker crumbs, melted butter, and 1/4 cup sugar in a bowl. Press into the bottom of the dish.
  3. Beat the softened cream cheese and 1 cup of sugar together until light and smooth.
  4. Add the eggs one at a time, mixing well after each addition. Stir in sour cream, lemon juice, and lemon zest.
  5. Pour the cheesecake mixture over the graham cracker crust, smoothing the top.
  6. Bake for 30-35 minutes until the edges are set and center has a slight jiggle.
  7. Cool to room temperature, then refrigerate for at least 4 hours before serving.
  8. Top with lemon curd before serving.

Notes

Store in the refrigerator for up to 4 days, or freeze for up to 2 months.
