  • 1/2 cup cream cheese, softened
  • 1/2 cup butter, softened
  • 1 cup sugar
  • 2 large eggs
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • Zest of 1 lemon
  • 1/4 cup lemon juice
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar (for glaze)
  • 23 tablespoons lemon juice (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. Beat together the softened cream cheese and butter until smooth and creamy.
  3. Add in the sugar and mix until well combined.
  4. Mix in the eggs, one at a time, ensuring full incorporation.
  5. Whisk together the flour, baking powder, baking soda, and salt in another bowl. Gradually add this to your wet batter.
  6. Fold in the lemon zest, lemon juice, and vanilla extract.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 55-65 minutes or until a toothpick inserted in the center comes out clean.
  9. Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack.
  10. Whisk together the powdered sugar and lemon juice to prepare the glaze, then drizzle it over the cooled bread.

Notes

Serve with tea, coffee, or as a dessert with ice cream. Store leftovers in an airtight container for up to 3 days.
