A delightful Lemon Curd Tart with a perfect blend of sweet and tangy flavors, encased in a flaky crust.

Ingredients

  • 1 1/4 cups all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/4 cup powdered sugar
  • 1/4 teaspoon salt
  • 1 large egg yolk
  • 2 cups fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 cup granulated sugar
  • 4 large eggs
  • 1/2 cup heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix together the all-purpose flour, softened butter, powdered sugar, and salt until it resembles coarse crumbs. Add the egg yolk and mix until a dough forms.
  3. Press the dough into a tart pan and bake for 15-20 minutes until golden brown.
  4. Whisk together the fresh lemon juice, lemon zest, granulated sugar, and eggs for the filling.
  5. Pour the lemon mixture into the baked tart shell and bake for another 20 minutes until set.
  6. Cool the tart for a bit and then chill in the refrigerator for at least 2 hours.
  7. Serve slices topped with whipped cream, if desired.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days.
