  • 1 teaspoon salt (plus more to taste)
  • 1 teaspoon black pepper (plus more to taste)
  • 4 small zucchinis, sliced into 1-inch pieces

Instructions

  1. Prepare the Marinade: In a bowl, mix together the fresh lemon juice, olive oil, minced garlic, dried oregano, paprika, salt, and black pepper. This aromatic blend will infuse the chicken with zesty flavor. Place the chicken breasts in a resealable bag, pour in the marinade, and massage it gently to coat. Let it marinate in the fridge for at least 15 minutes, or even overnight if time allows!
  2. Prepare the Potatoes: While the chicken soaks up those lemony flavors, preheat your oven to 425°F (220°C). In a mixing bowl, toss the diced yellow potatoes with olive oil, garlic powder, salt, and pepper. Spread them out on a baking sheet in a single layer, making sure they have space to roast properly.
