Lemon Garlic Chicken

A simple yet flavorful lemon garlic chicken dish, perfect for weeknight dinners or special gatherings.

  • 4 boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • 1/4 cup fresh lemon juice
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley, for garnish

Instructions

  1. Whisk together the olive oil, lemon juice, minced garlic, oregano, salt, and pepper in a bowl until combined.
  2. Place the chicken breasts in a resealable plastic bag or dish and pour the marinade over them. Seal the bag or cover the dish and marinate in the refrigerator for at least 30 minutes (ideal is 2 hours).
  3. Preheat the grill or oven to 400°F (200°C).
  4. Remove the chicken from the marinade, discarding the remaining marinade. Let the chicken sit for a few minutes to remove the chill from the fridge.
  5. Place the chicken on the grill or a baking sheet. Grill or bake for 6-7 minutes per side, until fully cooked and the internal temperature reaches 165°F (75°C).
  6. Remove from heat and let the chicken rest for a couple of minutes. Garnish with freshly chopped parsley before serving.

Notes

For extra flavor, try adding lemon zest to the marinade or serve with Greek salad and a chilled glass of white wine.
