  • 1 pound of shrimp, peeled and deveined
  • 2 tablespoons of olive oil
  • 4 cloves of garlic, minced
  • 1 lemon, juice and zest
  • 1 cup of vegetable or chicken broth
  • Fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Cook the Orzo: Start by cooking the orzo pasta according to package instructions; drain and set aside.
  2. Heat the Olive Oil: In a large skillet, heat the olive oil over medium heat.
  3. Sauté Garlic: Add the minced garlic and sauté until fragrant, about 1 minute.
  4. Cook the Shrimp: Add the shrimp to the skillet and cook until pink and opaque, about 3-4 minutes.
  5. Add Broth and Lemon: Pour in the vegetable or chicken broth along with the lemon juice and zest; bring to a simmer.
  6. Combine with Orzo: Add the cooked orzo to the skillet, tossing everything together.
  7. Finish Off with Seasoning: Season with salt, pepper, and fresh parsley before serving.
