A comforting dish combining the zesty brightness of lemon with creamy chicken and soft gnocchi.

Ingredients

  • 1 pound gnocchi
  • 2 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 lemon (zest and juice)
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the gnocchi according to package instructions; drain and set aside.
  2. Heat olive oil in a skillet over medium heat.
  3. Sear the chicken breasts, seasoned with salt and pepper, until golden and cooked through, about 5-7 minutes per side. Remove and slice.
  4. Sauté the garlic in the same skillet for 1 minute.
  5. Add lemon zest, juice, and heavy cream; stir to combine and let simmer for 2-3 minutes.
  6. Combine gnocchi and chicken in the skillet; toss to coat.
  7. Garnish with fresh parsley and serve immediately.

Notes

For a lighter version, substitute heavy cream with half-and-half or a dairy-free alternative. Consider adding seasonal vegetables for extra nutrition.
