Baked Cod with Lemon

A light yet satisfying baked cod dish infused with the bright flavors of lemon, garlic, and oregano, perfect for weeknights or gatherings.

Ingredients

  • 1 1/2 pounds Cod fillets
  • 3/4 teaspoon Kosher salt
  • Fresh ground black pepper
  • 2 tablespoons Lemon juice & zest of one lemon
  • 2 tablespoons Olive oil
  • 1 teaspoon Dried oregano
  • 2 tablespoons Minced shallot
  • 2 tablespoons Minced garlic (about 4 cloves)
  • 1/2 teaspoon Smoked paprika
  • Chopped fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F and pat the cod fillets dry with paper towels.
  2. Sprinkle the cod fillets generously with kosher salt and black pepper.
  3. Combine the lemon juice, zest, olive oil, oregano, minced shallot, and minced garlic in a bowl and whisk.
  4. Brush a baking dish with olive oil and place the cod fillets inside.
  5. Brush the cod with the lemon mixture.
  6. Sprinkle smoked paprika over the cod fillets.
  7. Bake for 17 to 20 minutes until the fish flakes easily and reaches an internal temperature of 130°F.
  8. Garnish with chopped parsley and serve immediately.

Notes

Store leftover cod in an airtight container in the fridge for up to 2 days. Avoid freezing leftovers.
