A light and satisfying dish that brings the essence of summer with fresh cod baked with zesty lemon and aromatic herbs.

Ingredients

  • 1 1/2 pounds of cod fillets
  • 3/4 teaspoon kosher salt
  • Freshly ground black pepper
  • 2 tablespoons lemon juice
  • Zest of one lemon
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 2 tablespoons minced shallot
  • 2 tablespoons minced garlic (about 4 cloves)
  • 1/2 teaspoon smoked paprika
  • Chopped fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F and pat the cod fillets dry with paper towels.
  2. Sprinkle the cod fillets generously with kosher salt and freshly ground black pepper.
  3. Combine lemon juice, zest, olive oil, oregano, shallot, and garlic in a bowl, whisking until mixed.
  4. Brush a baking dish with olive oil and place the seasoned cod inside.
  5. Brush the lemon mixture over the cod fillets for extra flavor.
  6. Sprinkle smoked paprika evenly over the fish.
  7. Bake for 17 to 20 minutes until fish flakes easily and reaches 130°F internal temperature.
  8. Garnish with chopped fresh parsley and serve immediately.

Notes

Pair with a light salad or quinoa for a wholesome meal. Leftover cod can be stored in the fridge for up to 2 days.
