A light and satisfying baked cod dish with a zesty lemon flavor and a crispy crust, perfect for weeknight dinners or gatherings.

  • 1 1/2 pounds Cod fillets
  • 3/4 teaspoon Kosher salt
  • Fresh ground black pepper to taste
  • 2 tablespoons Lemon juice & zest of one lemon
  • 2 tablespoons Olive oil
  • 1 teaspoon Dried oregano
  • 2 tablespoons Minced shallot
  • 2 tablespoons Minced garlic (about 4 cloves)
  • 1/2 teaspoon Smoked paprika
  • Chopped fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F. Grab your cod fillets and pat them dry with paper towels.
  2. Sprinkle the cod fillets generously with kosher salt and freshly ground black pepper.
  3. In a medium bowl, combine lemon juice, zest, olive oil, dried oregano, minced shallot, and minced garlic. Whisk until fragrant.
  4. Brush a baking dish with olive oil and place the seasoned cod fillets inside it.
  5. Brush the remaining lemon mixture generously over the cod fillets.
  6. Sprinkle smoked paprika evenly over the cod fillets.
  7. Bake for 17 to 20 minutes until the fish flakes easily with a fork.
  8. Garnish with chopped parsley and serve immediately.

Notes

Ensure your fish is fresh for the best flavor. Leftovers can be stored in an airtight container in the fridge for up to 2 days.
