A delightful dessert featuring a warm, gooey lemon center enveloped in a rich white chocolate shell.

Ingredients

  • 1/2 cup unsalted butter
  • 1 cup white chocolate chips
  • 2 large eggs
  • 2 large egg yolks
  • 1/4 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1/4 cup fresh lemon juice
  • Zest of 1 lemon
  • Pinch of salt
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 425°F (220°C) and grease four ramekins generously with butter.
  2. Melt together the butter and white chocolate chips in a microwave-safe bowl.
  3. Whisk together the eggs, egg yolks, and granulated sugar until pale and fluffy.
  4. Stir the melted chocolate mixture into the whisked eggs until no streaks remain.
  5. Fold in the flour, fresh lemon juice, lemon zest, and a pinch of salt until just combined.
  6. Pour the batter into the prepared ramekins, filling them about three-quarters full.
  7. Bake for 12-14 minutes until the edges are firm but the center is soft.
  8. Let the cakes cool for 1 minute before inverting onto plates.
  9. Dust with powdered sugar and serve immediately.

Notes

Make sure to grease your ramekins well to prevent sticking. Serve with vanilla ice cream or whipped cream for added indulgence.
