Delightful cookies that combine the brightness of lemon with the aromatic notes of culinary lavender, perfect for springtime indulgence.

  • 1 cup granulated sugar
  • 2 large eggs
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon dried culinary lavender
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • Powdered sugar for dusting

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the eggs, fresh lemon juice, lemon zest, and dried culinary lavender until well combined.
  4. Whisk together the all-purpose flour, baking powder, and salt. Gradually add this mixture to the butter mixture and mix until just combined.
  5. Scoop tablespoons of dough onto ungreased baking sheets, spacing them about 2 inches apart.
  6. Bake for 12-15 minutes, or until the edges are lightly golden.
  7. Remove from the oven and cool on the baking sheets for a few minutes before transferring to wire racks.
  8. Dust with powdered sugar before serving.

Notes

These cookies are great with Earl Grey tea or lemonade and can be stored in an airtight container for up to one week.
