  • 1/2 cup granulated sugar
  • 1/2 cup powdered sugar
  • 1 tablespoon lemon zest
  • 1 tablespoon culinary lavender buds
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 cup lemon curd (for filling)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter, granulated sugar, and powdered sugar until light and fluffy.
  3. Stir in the lemon zest, lavender buds, and vanilla extract until well combined.
  4. Add the flour and salt gradually, mixing until just combined.
  5. Roll the dough into 1-inch balls and place them on a baking sheet lined with parchment paper.
  6. Create an indentation in the center of each cookie with your thumb.
  7. Fill each indentation with lemon curd.
  8. Bake for 12-15 minutes until the edges are lightly golden.
  9. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack.

Notes

Use culinary lavender buds for safety. Store in an airtight container at room temperature for up to one week.
